GOLDEN CURRY CHICKPEA SALAD


Ingredients

  • 3 cucumber, chopped

  • ½ red onion, chopped

  • 2 cups cherry tomato, chopped

  • ½ cup fresh parsley, chopped

  • 1 can drained chickpeas

Dressing

  • ¼ cup 0% Greek yogurt

  • 2 tbsp coconut milk

  • 1 tbsp vinegar

  • 1 Ftsp Dubai Sunset seasoning

  • ½ tsp red curry powder


Directions:

Combine all chopped veggies in a large salad bowl.  In a small mason jar add all the dressing ingredients.  Whisk together until combined, drizzle over salad.

 Notes:  Pairs great with Dubai Chicken and brown rice.
