CHIPOTLE STREET TACOS


Ingredients

  • 2lb chicken breast

  • 3 tbsp chipotle peppers in adobo sauce, chopped

  • 2 tbsp fresh lime juice

  • 3 cloves garlic, minced

  • 1 tsp salt

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 2 tbsp honey

  •  1 tbsp olive oil

            

    Sauce

             ΒΌ cup Greek yogurt

             1 tbsp chicken marinade

     

    Toppings:

             Chipotle sauce

    Pico Salsa

             Avocado

             Small corn tortillas


Directions:

In a medium bowl mix the peppers, lime juice, garlic, honey, and spices together.  Remove 1 tbsp of marinade and set aside. Chop the chicken into bite sized pieces, and add to marinade.  Marinate in fridge for 1-6 hrs.  Heat oil in a large pan and cook chicken until brown on both sides.  In a small bowl mix the yogurt and chicken marinade together to make the chipotle sauce.  Add to small tortilla and top with pico salsa, chipotle sauce, and avocado.
