BAKED BALSAMIC PARMESAN GNOCCHI


Ingredients

  • 1 16oz package of gnocchi

  • 1 red onion, chopped

  • 1 orange bell pepper, chopped

  • 1 pint of cherry tomatoes

  • 2 tbsp olive oil

  • 1 tsp oregano

  • 1 tsp garlic powder

  • ½ tsp salt

    Toppings:

  • Balsamic glaze

  • Parmesan cheese

  • Fresh basil

     


Directions:

Preheat oven to 400. Line a large baking sheet with foil. Place the gnocchi, bell pepper, onion, and tomatoes on sheet.  Toss with olive oil and spices until fully coated.  Bake for 25 minutes.  Serve with a drizzle of balsamic glaze, cheese, and basil.
