Turmeric orzo arugula salad


Ingredients

        1 cup of chicken broth

         1 cup of water

         1 cup of orzo

         ¼ tsp tumeric

         ½ tsp garlic powder

         ¼ tsp pepper

         ½ tsp salt

         1 pkg arugula

         1 cup of peas

         1 tomato chopped

         ½ red onion chopped

         herb feta to taste

         Olive vinegarette to taste


Directions:

 Bring water and chicken broth to a boil in small pot.  Add the orzo and spices, boil for 5 minutes, stirring frequently.  While orzo is boiling place peas in a bowl and strainer on top.  Once orzo is finished pour into strainer, the boiling water will cook the peas.  Strain the peas after 2 minutes.  Combine all of ingredient in a large bowl and serve.

 Notes:  I prefer to make this for easy meal prep.  I combine the orzo, peas, onion, and tomato in tubber ware, and then serve over arugula.    I use the feta and olive oil sparingly about a tbsp of each for a large single serving of salad.
