CHIPOTLE TURKEY BOWL


Ingredients

  • Turkey:

    2lb ground turkey (1 Costco pkg)

    ¼ taco seasoning packet

    1 tbsp olive oil

     

  • Veggies:

    ½ red onion, thinly sliced

    4 Bell peppers, thinly sliced

    1 tbsp olive oil

  • Rice:

    1 cup brown rice

    2¼ cup water

    ¼ cup fresh cilantro, diced

    1 tbsp lime juice

    Salsa Verde seasoning (Salt wolf)

     

  • Black beans:

                1 can drained black beans

                ½ tsp onion powder

                ½ tsp garlic powder

                ½ tsp paprika

                ½ tsp cumin

                ½ tsp oregano

  • Corn salsa:

                2 cups frozen corn

                ¼ red onion, diced

                ½ jalapeno, diced

                Salt, lime, cilantro to taste

     

  • Pico:

                3 tomatoes, diced

                ¼ red onion, diced

                1 tbsp lime juice

                2 tbsp fresh cilantro, diced

                ½ jalapeno, diced

                salt


Directions:

In a pot bring water to a boil then add the rice, simmer for 40 minutes.  While rice is cooking prepare other ingredients.  In a small pan on low heat thaw the corn, then combine other ingredients in a small bowl set aside in fridge.  In a small bowl, combine Pico ingredients, set aside in fridge.  In a small pan, heat beans and combine seasoning. Stir occasionally until all water has evaporated.  In large skillet heat oil over medium heat. Add bell peppers and onion and cook until tender and browned, set aside. In the same skillet heat oil over medium heat, add ground turkey and cook until brown, add seasoning. Once rice has cooked stir in fresh cilantro, lime, and seasoning to taste.  Serve turkey, rice, beans, veggies, salsa, and pico in a bowl.  Makes 4 servings.
