blueberry cottage cheese muffins


Ingredients

  • 1 cup Kodiak pancake mix

  • 1 cup cottage cheese

  • 2 scoops vanilla protein

  • 1 tsp vanilla

  • 2 eggs

  • ¼ cup milk

  • ¼ cup butter melted

  • ¼ cup coconut sugar

  • 1 cup blueberries – dust with Kodiak mix


Directions:

Combine all ingredients except for blueberries in a bowl and mix together.  Dust the blueberries in a small bowl with 2 tbsp Kodiak mix.  This will prevent the blueberries from sinking to the bottom of batter.  Fold in blueberries.  Pour batter into muffin tin.  Bake at 350 for 25 minutes.

 

Notes:  I use Promix Vanilla protein powder. Makes 12 muffins.  Macros: C 18 P 10 F 6
